Asparagus with Onion Salsa

This cool, slightly sweet salsa can be used to marinate vegetables like asparagus, accompany barbecued meats or to top toasted bread. It takes only 5 to 10 minutes to prepare.

Prep Time: 10 minutes

Cook Time: 00 minutes

Ingredients:

  • 1 medium red onion
  • 2 firm tomatoes
  • 1/4 cup sherry vinegar or balsamic vinegar
  • 4-5 fresh mint leaves

Preparation:

This Onion Relish recipe makes 4 servings to accompany grilled meat or a bunch of asparagus.

Cut red onion and tomato into paper-thin slices. Finely chop mint leaves.

Place onion, tomato and mint into a bowl. Add vinegar and mix. Add additional vinegar if needed. Allow to marinate for an hour before serving.

Refrigerate if salsa will not be served immediately. May be stored for 3 days in refrigerator.
