This Spanish white bean recipe is a good first course, particularly when you are short on time. It takes just 15 minutes to prepare and makes a solid start to a meal. Garlic, Swiss chard and pancetta combine to create an appetizing blend of flavors from the Mediterranean.

Cook Time: 10 minutes

Total Time: 15 minutes

Ingredients:

  • 2 oz (60 gr) pancetta
  • 2 large garlic cloves
  • 6 oz Swiss chard leaves (no stems)
  • 3-4 Tbsp Spanish olive oil
  • 2 cans (15 oz each) white beans
  • 8 oz beef broth
  • Salt to taste

Preparation:

This Spanish White Bean recipe makes 4 servings.

Finely chop the pancetta and garlic. Clean the Swiss chard leaves and chop. Open white beans and drain liquid.

Pour the olive oil into a large, heavy-bottom frying pan and heat. Sauté pancetta and garlic for 3-4 minutes. Toss in Swiss chard leaves and stir.

Once the chard leaves are wilted, add white beans and broth. Simmer on low for 5 minutes. Taste and adjust salt as needed. Serve with rustic bread.
