Making Patatas a la Importancia - Gather the Ingredients

Patatas a la Importancia as the name implies are “potatoes of importance.” These are probably one of the most delicious and richest potato recipes you will ever taste! The potatoes are thickly sliced, coated in flour, dipped in egg and browned in olive oil. After draining excess oil, they are simmered in a sauce made of finely chopped onion and garlic, a pinch of saffron and chicken broth. Finally, they are served piping hot.

Although these potatoes require several steps and about a half hour cooking time, they are definitely worth every minute! Serve them to accompany any kind of roast - beef, chicken, pork or lamb.

  • 6 Medium Potatoes, Peeled
  • 4 Cloves Garlic, Finely Chopped
  • 1 1/2 Yellow Onion, Finely Chopped
  • Olive Oil for Frying
  • 2 cups Chicken Broth
  • 3-4 threads Saffron
  • 2 Tbsp. Flour for Sauce
  • Flour to Coat Potatoes
  • 2 Eggs Lightly Beaten
  • Salt and Pepper to Taste
  • 4 Threads Saffron

Serves Four.

Preparation Time: 12 minutes

Cooking Time: 30 minutes
