The traditional Thanksgiving meal centers around a big, beautiful roasted turkey surrounded by all kinds of side dishes. Most of us in the USA look forward to that meal and the leftovers, too. After all, enjoying turkey sandwiches and football games the weekend following Thanksgiving has become as much a tradition as the meal itself. However, some of us look for ways to add some pizzazz to the turkey leftovers, which is why we'd like to share two simple turkey sandwiches. The first sandwich is sliced turkey topped with tangy blue cheese, which is then melted and drizzled with a balsamic syrup. The second is turkey with creamy, melted brie cheese and sweet membrillo. Both are made with toasted rustic sandwich rolls drizzled with extra virgin olive oil, and served warm.

Turkey, Blue Cheese and Balsamic Syrup Sandwich Recipe

This easy sandwich is a great way to use leftover roast turkey (or chicken). It's salty and tangy with the blue cheese, combined with the sweet and sour surprise of the balsamic syrup. Slice turkey and place on a toasted bun with olive oil. Crumble blue cheese over turkey and melt under broiler. Drizzle balsamic vinegar syrup over the top and serve warm.

Ingredients

  • 1 rustic bread bun or roll
  • extra virgin olive oil for drizzling
  • several slices roasted turkey
  • 1-2 oz blue cheese, such as Valdeon or Cabrales
  • balsamic syrup

Cut rolls horizontally, and toast under the broiler until lightly browned.

Warm the turkey slices. Drizzle extra virgin olive oil on cut sides of roll. Place turkey on toasted roll. Crumble blue cheese over turkey, and place under broiler until cheese begins to melt. Remove from oven and drizzle balsamic syrup over top. Serve warm.

Note: If Spanish blue cheeses are not available in your area, substitute another good quality blue cheese.

Turkey, Brie and Membrillo Sandwich Recipe

Sliced turkey, topped with creamy, rich brie cheese and sweet membrillo, (quince paste). Warm turkey slices are placed on a toasted bun, then slices of brie and pieces of membrillo on top. The whole sandwich is then broiled until the brie melts and bubbles. Serve warm.

Ingredients

  • 1 rustic bread bun or roll
  • extra virgin olive oil for drizzling
  • several slices roasted turkey
  • several slices brie cheese
  • several slices membrillo, quince paste

Cut rolls horizontally, and toast under the broiler until lightly browned.
