White Beans with Vinaigrette Sauce, “Alubias con Salsa Vinagreta” in Spanish is a simple and quick Spanish “tapa,” especially good in the summertime. White beans are simply combined with onion, pepper, oil and vinegar. Serve in a bowl with some crusty bread. Double the recipe and serve as a first course salad for four.

Ingredients:

  • 1-16 oz can white beans, such as cannellini
  • 1 red or green pepper
  • 1/2 medium yellow onion
  • 6 tbsp red wine vinegar
  • 1/4 cup extra virgin olive oil
  • salt to taste
  • 1 clove garlic (optional)

Preparation:

This white bean with vinaigrette sauce recipe makes 4 servings.

Open and pour out the liquid from the can of beans. Rinse and drain the beans.

Finely chop the pepper and onion and place into a medium mixing bowl. Add the beans and mix.

Pour in vinegar, olive oil and salt. Taste and adjust flavor.

If you are a garlic lover, peel and mince 1 clove of garlic and add to the mixture and stir.
