Langostinos Cocidos - Boiled Prawns

"Langostinos" are a very large shrimp or prawns that are often simply boiled whole and chilled. They are then served by themselves on a plate or with “salsa rosa” or in vinaigrette. To be as flavorful as possible, they should be cooked with the shell and head on. In Spain, they are sold in grocery stores everywhere with the head on. In the USA, if your local supermarket does not sell them with the head on, ask them to order them for you. Or, go to an ethnic supermarket, where fresh fish is sold. Asian supermarkets generally have fresh fish and live fish in tanks for you to choose from.

Cook Time: 5 minutes

Ingredients:

  • 1.5 lbs langostinos or prawns, with shell and head on
  • pinch of salt
  • 1 lemon

Preparation:

Serves 6 as an appetizer.

Thoroughly rinse shrimp under cold running water and place in a colander while you boil water.

Bring water to a rolling boil in a large stock pot. Place water in pot not just to cover, but so that the shrimp move freely while boiling. Add a pinch of salt. Add shrimp and boil approximately 5 minutes.

Pour out water and shrimp into colander to drain. Cool 10-15 minutes. Refrigerate at least 1-2 hours in a sealed container or a plate covered in plastic wrap.

Cut lemon into quarters. When you are ready to serve shrimp, remove from refrigerator and arrange on a plate with slices of lemon. Squeeze lemon over shrimp, if desired.
