Roasting peppers is simple and takes about 30 minutes start to finish. They are a traditional food in Spanish cuisine, used as an ingredient or eaten with olive oil and garlic. Char any kind of fresh pepper on a barbecue grill or under the broiler, then peel. Use them right away or place in a plastic bag and freeze for later.
